NSR- Salads
What is your favorite? I like me some Cobb, myself.
Most likely the unhealthiest salad choice of all, but who am I, Dr. Oz? I think not!!
And it's always good to just stick between two pieces of bread and make the hi calories sandwich it truly is, sans bread.
I am also partial to a good Cesar

One of our favorite summer meals is this pasta salad...
1 package Buitoni cheese tortellini (boiled and rinsed with cool water)
1 can black olives (sliced)
1 can artichoke hearts (sliced)
garden fresh cherry tomatoes (halved)
1/2 small ham steak (cut into cubes)
Toss with a light amount of vinaigrette.
The measurements above are up to interpretation. Just add more or less of anything you like or don't like. I prefer balsamic vinaigrette but my wife likes bottled Olive garden italian dressing.
If you have never tried a salad made with shredded brussels sprouts, you don't know what you are missing. There are several recipe variations floating around the web with various additions like walnuts, dried cranberries, chickpeas etc. I've tried several and they have all been great.

I did this one today. Fantastic. I used the whole ham steak and instead of tortellini I used round ravioli. For the dressing I used Maries from the fresh section. Finished it with a sprinkle of shredded mozzarella. This is a salad I will be making again and again. It is a whole meal. Thanks so much.Scooter49 wrote:One of our favorite summer meals is this pasta salad...

Glad you liked it. It has everything you want in a meal...carbs and protein, fatty richness from the olives, sour zing from the artichokes, acid from the tomatoes and saltiness from the ham.KrispyKreme wrote:Scooter49 wrote:One of our favorite summer meals is this pasta salad...

Another one I am currently obsessing over...
Shredded Brussels sprouts (blanched for just a minute or two)
Red grapes (halved)
Feta cheese crumbles
Ham
The original recipe used vinaigrette to dress the salad, but I want to try some experimenting.

I'm such a picky eater that I find salads--which I limit to spinach, eggs, bacon bits, cheese and tomatoes--boring.
One of my favorite stories though was when a friend went to Brothers Hooligan with my family and ordered a salad (he had never been there before). Brothers Hooligan happens to be famous for classic, fried American food and gravy (and their green beans, which come with everything) so we gave him total h*ll for ordering a salad that night.
A few weeks later I run into him again and he says he told some other friends about all the crap we gave him over ordering a salad there. Their reply? "You ordered a SALAD at BROTHERS HOOLIGAN?!? YOU IDIOT!". So he got it from everyone! Cracked me up.
