I watched a show about cafe racers the other day and now I'm interested in building one. Is there any good motorcycle salvage yards in Denver?

Actually, I think the Ryca will be the cheapest, and the most reliable as well, since it's based on a Suzuki S40, which has been around forever, ad is both cheap and widely available on the used market.
Either would be less trouble than a straight-up resto of an older model bike, plus the conversion bits.
