Hoping for help with my Honda reflex

Been working on my little brothers 2001 Honda reflex (nss250). He hadn't ridden it in about a year, put a new fuel pump in shortly before it was parked, just put a new stator it it. Now whenever it gets up to 55-60mph it dies, then takes a few minutes to start again. Checked the fuel filter, fuel tank breather, fuel pump, just cleaned the carb, the SE valve was clean. The bike runs good around town at slower speeds for a while. Any thoughts or ideas would be appreciated.
