Scooter from Boise to Daytona Beach, Florida

My mom and I want to ride Buddies from Boise to Daytona Beach. Any ideas how I can plan a route using safer back roads and not interstates?

I start with Google Maps with the "avoid highways" option selected. I like that because I can drag my route around and refine it as I wish. Even go to street view and to a virtual ride...

and if you have AAA- you can request a trip tik with specific requirements like no freeways.
