Now that I have adjusted the carb air/fuel mixture screw I think the color
of the plug is supposed to be light brown coffee color on a 2 stroke?
I also read that the color can be a little dark to be safe running a little rich for a 2T. Is this correct and what is the frequency (miles) to check the plug color and will the color change with each carb A/F screw adjusting?
Thanks.

Cream color is a good place to be.
This has been discussed in many different threads, so with a quick search you might find exactly what you're looking for. A couple I found were:

And a more recent one:

You can also find some nice spark plug color charts with a Google.
